How to make it

  • 1) Wash the beet roots properly removing all dirt. Only remove the ends. Do not peel or cut at this stage.
  • 2) Take 1/2 cup peanuts and roast them in a microwave safe dish at 100 % power for 2 min. Shake the dish and see if the outer skins of the peanuts are coming out. If not toss in for another 30 sec and set aside
  • 3)Wrap each beetroot in aluminium foil loosely with a little opening to let extra moisture out. Place them in an oven safe metal dish( remember its oven not microwave). There is no need to grease the dish. Place them in an oven pre-heated at 200 degree celsius for 35-40 min. Check after 30 min by inserting a fork. If the beetroots feel soft then turn off the oven, else let them stay in till 40 min.
  • 3) In the meantime clean and roughly grate half a carrot
  • 4)Wash and chop coriander
  • 5)Once the beetroots are done take them out and let them rest. Once they are cool enough to handle. Plate the aluminium rolls on a plate and take out the beetroots. Peel them. They should come out easily now, chop off and throw the ends and cut the remaining into small cubes.
  • 6) For the dressing toss in the oil,vinegar,juice of 1 lemon, amchoor powder, salt as per taste, chili flakes together in a small bowl and whisk lightly for 30 sec
  • 7)Now to bring it together. In a large bowl in which you are going to eat, throw in half the beetroots, all of the carrot and half of the coriander. Pour some dressing and mix it. Now toss in the remaining beetroot and coriander, pomegranates and peanuts and the rest of the dressing in. Mix well.
  • Your delicious salad is ready to eat !! Tastes best when eaten warm.But cold is also fine.
  • Notes and variations :
  • 1) I have omitted the cheese as I wanted it to be a low cal salad. You can add it and place the salad in the microwave for 30 sec if you want the cheese to be soft and melting. The time however will depend on the type of cheese. In any case do not over cook it.
  • 2) I don't think amchoor is available everywhere. You can substitute it with any tangy seasoning you like. As an alternative you can use dried cheese powder and/or oregano and increase lemon juice or lime to balance the flavours
  • 3) You can increase chilli flakes, or add cayenne pepper, finely diced red chillis
  • 4) Use as many variations as you like. Just remember that you have to cut through the sweetness of the beet root so don't add any sweet elements. Add citrus flavours or spicy seasonings
