My Family's Lasagna

- 9 dry lasagna noodles; 3 noodles per layer (wider or deeper pans take more. shopping list
- 4 T olive oil shopping list
- 1 medium onion diced shopping list
- 1 lb of Italian Sausage Hot, Sweet, Mild or mixed ( unless you use my Bolognese recipe) Optional shopping list
- 2 jars of any good bottled sauce or 6 cups of my Bolognese sauce shopping list
- 1 15-ounce Ricotta cheese shopping list
- 1 egg shopping list
- 1/4 cup chopped or dried parsley shopping list
- 1/8 tsp nutmeg shopping list
- 1/4 tsp basil shopping list
- 2 c shredded mozzarella cheese (do not use fresh Mozzarella, Precious makes a great pasteurized mozzarella that will string) shopping list
- 1/2 cop fresh grated Romano cheese shopping list
- Salt and pepper to taste shopping list
How to make it
- Preheat oven to 375ยบ.
- Cook pasta according to the directions on the box, drain and place in cold water until ready to use.
- Saute the onions in olive oil until translucent, add sliced or crumbled sausage and brown well. Add bottled or your meatless sauce to the mixture and bring to a boil. Simmer until used.
- In a separate bowl, whisk the egg, add the ricotta, nutmeg, basil and parsley and mix well.
- Spray 9" x 12" baking dish with cooking mist.
- Place a layer of sauce on the bottom of the baking dish.
- **Place 3 cooked noodles over the sauce, overlap if necessary.
- Spoon and spread 1/2 of the ricotta mixture over the noodles.
- Sprinkle 1/4th of the mozzarella &1/3 of the Romano cheese
- Spread a thick layer of sauce over the cheese.
- Beginning with the noodles, repeat from ** once.
- Place the last 3 noodles on top of the last sauce and cover with remainder of sauce, mozzarella and Romano cheese.
- Place on a cookie tray, (to save your oven) and bake for 30 minutes.
- If the lasagna begins to brown, top with aluminum foil.
- Let stand for 5 minutes before serving.
