Spiced Rice And Pumpkin Chicken

- 900g chicken Thighs/mixed parts shopping list
- Salt and ground pepper shopping list
- 30g butter, 1Tbsp Oil shopping list
- 1 large onion, finely diced shopping list
- 2 galick cloves crashed (I used 4 and thats according your taste) shopping list
- 1tsp each-turmeric, paprika, ginger and cinnamon shopping list
- 1 Tbsp lemon zest shopping list
- 500g firm pumpkin, peeled and diced into 2cm shopping list
- 2 carrots shredded shopping list
- 600ml chicken stock or boiled water shopping list
- 1 cup Rice, washed and drained shopping list
How to make it
- Heat together butter and oil in a pan. Season Chicken with salt and pepper, add to pan and cook until golden brown. Remove Chicken from the pan and set aside. Add onion, garlic and carrots to the pan and cook for 8minutes over medium heat.
- Sprinkle over the spices and zest, cook for 2 minutes. If the mixure looks dry add small amount of water.
- Stir in the pumpkin until well coated with the spices and zest. Pour in chicken stock, stirring well and then add rice. Place the chicken on the top of the rice. Cover tightly and bake in the preheated oven for 45 minutes. Fluff up the rice with a fork before serving.

I made this last night. I switched out the Pumpkin chunks for a can of Pumpkin and it flavored the rice nicely.
Only thing I would change it to add salted chicken stock to the recipe instead of the unsalted version. The unsalted version base...morebradkessler in Anderson loved it
