How to make it

  • Heat together butter and oil in a pan. Season Chicken with salt and pepper, add to pan and cook until golden brown. Remove Chicken from the pan and set aside. Add onion, garlic and carrots to the pan and cook for 8minutes over medium heat.
  • Sprinkle over the spices and zest, cook for 2 minutes. If the mixure looks dry add small amount of water.
  • Stir in the pumpkin until well coated with the spices and zest. Pour in chicken stock, stirring well and then add rice. Place the chicken on the top of the rice. Cover tightly and bake in the preheated oven for 45 minutes. Fluff up the rice with a fork before serving.

    I made this last night. I switched out the Pumpkin chunks for a can of Pumpkin and it flavored the rice nicely.
    Only thing I would change it to add salted chicken stock to the recipe instead of the unsalted version. The unsalted version base tasted a little bland for me.
