How to make it

  • Cube the pork and brown it with salt and pepper. Combine with the chicken stock, cilantro, onion, and garlic. Roast the peppers and tomatillos; add to the other ingredients. Slow cook for 6-8 hours.
  • I like a smoother chili, so I usually blend the onion, garlic, cilantro, peppers, and tomatillos with the stock.
  • If you have time, skip the chicken stock and make your own with the pork shoulder remnants.
