How to make it

  • Place a glass bowl over a sauce pan with a few inches of water in it to create a double boiler.
  • Place all the ingredients except shredded coconut in a double boiler over medium heat.
  • Mix the ingredients while waiting for them to melt.
  • When all the ingredients are combined remove the bowl from the heat.
  • Place the bowl in the fridge until it is hard enough to roll into balls, about 30 minutes.
  • Roll the contents into one inch balls and roll them through the coconut shreds.
  • Place the balls on a plate and refrigerate for one hour.
  • Keep refrigerated when not serving.

    Incredibly delicious!! I love anything coconut and these are ideal to snack on when needing to curb your appetite. Healthy too because they are rich in healthy fats your body needs. I opted not to use the cinnamon and nutmeg called for only because I wanted the pure taste of coconut. I used a candy mold and popped them in the freezer as opposed to rolling. Once they were frozen I then unmolded them and then when they softened just a bit I pressed the tops in unsweetened shredded coconut and then into the fridge to be kept. These are really good!!
    (I used full fat Thai Kitchen organic coconut milk which is nice and rich and not at all watery. Mix well.)
