How to make it

  • Preheat oven to 300F.
  • Use peppers that are still pliable and leathery.
  • Snip cap off of dried Jalapenos and slice down the side removing seeds and ribs.
  • Splay peppers out placing them on a baking sheet.
  • Bake for 10 minutes. Let cool.
  • Break up and grind in a coffee/spice grinder to a powder. And please, give the powder a little time to settle before opening the grinder, to keep from having a coughing fit.
  • Filter through a fine metal mesh filter. Regrind any large pieces.
  • Re-purpose a spice container to hold the Chipotle powder.
  • Grind a couple tablespoons rice to pull out the pepper oil and clean the grinder.
