Ingredients
- 1 box yellow cake mix shopping list
- 1/4 cup butter, softened shopping list
- 4 eggs shopping list
- 3/4 cup (packed) brown sugar shopping list
- 3/4 cup dark corn syrup shopping list
- 1 tsp vanilla shopping list
- 1 1/4 cup coarsely chopped pecans shopping list
How to make it
- Preheat oven to 350
- Lightly grease 13" X 9" cake pan
- Set aside 1 cup of cake mix for filling
- Crust - In large bowl combine remaining cake mix, butter, and 1 slightly beaten egg.
- Mix with fork until crumbly.
- Turn into prepared cake pan and press into an even layer in pan bottom.
- Bake for 12 minutes.
- Filling - Combine 3 eggs, brown sugar, corn syrup, and vanilla.
- Add the 1 cup of cake mix that was set aside earlier.
- Stir until well blended.
- Spread evenly over baked crust.
- Sprinkle pecans over filling.
- Bake for 25-30 minutes, or until filling appears to be set when gently shaken.
- Cool completely before cutting.
- FOOTNOTES:
- White cake mix can be used with no discernable change in flavor.
- I usually cut into 1"X2" pieces
