  • Chill until mixture begins to thicken.
  • Stir pickle, pimento, pineapple and nuts into gelatin and place in the frigidaire.
  • Serve with a slow roasted shoulder roast, covered in a rub of say...paprika,garlic powder, cayenne, chili powder, brown sugar, celery salt, mustard powder, kosher salt...and a good ole' Killian's Irish Red to finish it out for about three hours covered, and then one hour uncovered...serve along side honey glazed carrots in rapeseed oil, butter, clear honey, and fresh thyme leaves and a beer bread made of the same Killian's Irish Red...and alas,a cake made of mikado biscuits filled with strawberry jam.

  • An Irish Coffee with a kick...
  • One half cup of good quality coffee, one measure of Irish Whiskey,3 spoonfuls of brown sugar, about two tablespoons of fresh cream...put a teaspoon into the glass with a stem and pour some boiling water into the glass to warm it up a bit...why put the spoon in the glass may ye' ask...well then, me laddie...that is that the spoon takes the heat for the water and the glass does not crack...pour the coffee up to almost the tippy top,and put in two spoons full of sugar and stir until the sugar is dissolve...you will know this when you peer into the base of the glass...the sugar ensures that the cream will float...place the spoon on to the rim of coffee...making sure that the curved part of the spoon is touching the coffee...touching...not submerged...and with the cream in a small jug, pour it onto the back of the spoon...the cream will flow over the edge of the spoon and rest on top of the coffee...what you should be left with is a glass of black coffee...not cloudy and with no trace of cream, but which you will see on the top.
