How to make it

  • Wash the peppers and remove the seeds
  • Cut into slices about 1/2 inch thick
  • Saute the whole garlic cloves in oil 1-2 minutes
  • Add the peppers, salt and pepper to taste, stirring continuously for a couple of minutes
  • Add the tomatoe paste, mix well and cook over low heat adding a bit of water if it gets to thick
  • Continue cooking for about 20 minutes until the peppers are very soft
  • Remove from the heat and add the basil leaves.
  • I also if i have it add zucchini or egg plant for the last 10 minutes or so.
  • This is a great side for any kind of meat, i like it with chicken.
  • It is good hot or cold, and really good between 2 thick slices of crusty Italian bread.
  • Also over poached eggs.
  • Another oldie but goodie.
