How to make it

  • Have everything ready and cold...that means all the ingredients and all the equipment...cuz' once the cold means the heat...It's magic!
  • I even keep a container of ice in the kitchen sink to thrust my hands in from time to time just to keep the body heat down so that the butter will not melt.
  • Mix the cream cheese...two thirds cup butter and one cup of flour...you will do this between your finger tips like you were snapping your fingers with a quick movement and as little prolonged contact as possible...divide and conquer...by placing the mass in two resealable plastic bags...and refrigerate for a spell...when ready to get into the heat of the matter then fire your range up to a correct decimal and then sling flour through the air and where it lands no one knows where...ya' just want to get some on the counter surface though and with ice cold floured hands and floured marble rolling pin that you had stashed in the freezer then get to work and roll out one portion of the mass at a time to about one half inch thick...these are 'itty bitty shots' remember,and then for each biscuit clip a one inch biscuit cutter into flour and cut straight down...no webbie wobble...quick and precise...one shot one clear cut through...Which reminds me...This is 'Veterans Day' and this is one 'Vet' I will never forget...

  • Back to baking...you cut out the biscuits starting at the outside edge and cutting very close together,being careful not to twist the cutter...using a full metal jacket spatula move the biscuits to an ungreased baking sheet and place 'em one inch apart...bake on the top rack for a total of however long it takes...rotate the pan in the hot oven so that the front of the pan is now turned to the back and check to see if the bottoms are browning too quickly...and if so then slide another baking pan underneath to add insulation...continue baking another few more minutes until the biscuits are golden...when done,then lightly brush top with melted butter and turn biscuits out onto a service plate...serve hot right side up!
  • I like to serve these with steak and a whiskey sauce...and that would be Irish Whiskey if you please...A Jameson 18 Year Old would be a big sipping whiskey with notes of molasses,caramel and apple pie spice...Don't mix this one with anything more than a few drops of water to release its mouthwatering flavors...a Tyrconnell Irish Whiskey being a single malt with almond and walnut notes intermingled with shorbread and caramel on the palate with green apple that come into play will do quite nicely
