Quick Italian Tomato Basil And Spinach

- 2 cans tomatoes, drained shopping list
- 1 bag frozen seasoning shopping list
- 2 cups fresh chopped spinach or 1/4 bag frozen shopping list
- 1:2 stick butter shopping list
- Tablespoon Zatarains garlic and herb spice ( or other favorite spice) shopping list
- 1/4 tsp garlic powder shopping list
- 1 teaspoon Italian spice blend shopping list
- 5 to 6 basil leaves, sliced or use a little pinch of dried shopping list
- 3 cups chicken broth shopping list
- 2/3 cup heavy cream shopping list
- 1/2 cup shaved Parmesan cheese( more for garnish) shopping list

How to make it
- In large pot melt butter over med high heat.
- Stir in frozen seasoning ( onions celery bell pepper) and cook 2-3 minutes.
- Stir in broth and bring to a boil
- Stir in tomatoes and spinach, lower heat and cook 5 minutes
- Using slotted spoon remove tomatoes and veggies in batches and place in blender.
- Blend on high until mostly smooth or about 30 seconds.
- Return to pan and stir in cream and spices and continue to cook about five minutes
- Stir in Parmesan and basil and allow to cook another minute or two
- Ladle into soup bowls adding a little Parmesan on top
- Serve with croutons on top or toasted cheese bread chunks
- Toasted cheese bread
- Toast bread until brown
- Spread toast with butter and sprinkle with Parmesan cheese
- Place under broiler until cheese melts
- Remove from over and sprinkle with a little Italian seasoning spice and cut into triangles
