Chicken Cacciatore – Jimmie’s

- 6 pieces chicken, about 4 lbs. (About 2 Kilos.) shopping list
- ¼ Cup Olive oil shopping list
- 4 Tbs. flour. shopping list
- 2 oz. salt pork. shopping list
- ¼ Cup butter. shopping list
- ½ lb. (about 1 cup) pealed & chopped onions. shopping list
- ¼ cup chopped bell pepper. shopping list
- 2 or 3 cloves garlic, mashed & chopped fine. shopping list
- 1 tsp. Italian seasoning, you may want a touch more. shopping list
- Salt & FG pepper to taste. shopping list
- 2 – 2 1/2 cups canned & peeled tomatoes, chopped. shopping list
- 1 Tbs. tomato paste. shopping list
- 2 or three good sized mushrooms. This is no big deal. If I have them I add them. shopping list
- ¼ cup dry red wine. shopping list
How to make it
- 1. Combine oil, salt pork & butter in a good sized frying pan, heat.
- 2. Lightly dredge chicken in the flour, put in the frying pan & brown on all sides.
- 3. Remove the chicken & set aside.
- 4. Put all the oil & drippings from the frying pan into a large pot.
- 5. Heat & add onions & bell pepper, cook until onions are slightly brown.
- 6. Add the chopped garlic, salt & FG pepper, mushrooms & Italian seasoning, stir well & cook for five minutes.
- 7. Add the chicken pieces & heat through.
- 8. Add tomatoes, tomato paste & wine, stir well & cook for about 30 minutes.
- 9. Check for donenes & adjust spices as necessary. Do not overcook.
- 10. Serve over warm, fresh cooked pasta.
- A good sprinkle of fresh grated Parmesan cheese is always nice.
- Fresh garlic bread & a nice green salad go well with this.
- Don’t forget the vino. I like Chianti here but whatever works for you.
