How to make it

  • 1. Combine oil, salt pork & butter in a good sized frying pan, heat.
  • 2. Lightly dredge chicken in the flour, put in the frying pan & brown on all sides.
  • 3. Remove the chicken & set aside.
  • 4. Put all the oil & drippings from the frying pan into a large pot.
  • 5. Heat & add onions & bell pepper, cook until onions are slightly brown.
  • 6. Add the chopped garlic, salt & FG pepper, mushrooms & Italian seasoning, stir well & cook for five minutes.
  • 7. Add the chicken pieces & heat through.
  • 8. Add tomatoes, tomato paste & wine, stir well & cook for about 30 minutes.
  • 9. Check for donenes & adjust spices as necessary. Do not overcook.
  • 10. Serve over warm, fresh cooked pasta.
  • A good sprinkle of fresh grated Parmesan cheese is always nice.
  • Fresh garlic bread & a nice green salad go well with this.
  • Don’t forget the vino. I like Chianti here but whatever works for you.
