Pork Breakfast Sausage

- • 1 lb. ground pork. shopping list
- • ¼ lbs. bacon, chopped very fine. shopping list
- • 1 tsp. kosher salt. shopping list
- • ½ tsp. freshly ground black pepper. shopping list
- • 1 tsp. finely chopped fresh sage leaves. shopping list
- • 1 tsp. finely chopped fresh thyme leaves. shopping list
- • ¼ tsp. finely chopped fresh rosemary leaves. shopping list
- • ½ Tbs. light brown sugar. shopping list
- • ¼ tsp. fresh grated nutmeg. shopping list
- • ¼ tsp. cayenne pepper. shopping list
- • ¼ tsp. red pepper flakes. shopping list
- • Dash of Worcestershire Sauce. shopping list
How to make it
- 1. Combine all ingredients and mix (kneed) thoroughly.
- 2. Put the combo in a plastic bag and refrigerate for 24 hours.
- 3. Remove from fridge and let sit for about an hour.
- 4. Kneed another 20 times.
- 5. Line a cooking sheet with wax paper.
- 6. Form into the sausage into the size of patties you want. There will be some shrinkage when you cook these.
- 7. Place the patties on the cookie sheet until it’s full.
- 8. Add another sheet of wax paper and another layer of patties, until all sausage mix is used up.
- 9. Put into the freezer for three or four hours.
- 10. When the patties are frozen, remove them from the cookie sheet and pack as you like.
- 11. Return to the freezer.
- It takes about an hour for these to thaw at room temp. Or, move some from the freezer to the fridge the night before. They will last three or four days in the fridge.
