How to make it

  • 1. All of the above stuff, except the oregano and chicken broth, needs prepping.
  • 2. Get out the onion, peel and chop it and put it in a small bowl, or cup.
  • 3. Get out the bell pepper, seed and chop it and put it in a small bowl.
  • 4. Get out the cheese, grate it and put it in a small bowl.
  • 5. Get out the head of broccoli and break or cut off ½ cup of florets. But the head back in the fridge and the florets in a small bowl.
  • 6. Get out the mushrooms and clean one cup worth. Put the rest back in the fridge and the cleaned ones in a small bowl. See Photo
  • 7. Get out the chicken broth and measure out 2 cups.
  • When all the ingredients are prepped start cooking. This is a handy trick any time but especially when you’re having guests and what you’re fixing can’t really be cooked ahead of time. Prep the stuff, put into small bowl and cover with a dish cloth. When it comes time to cook, it’s a breeze.

It is used in professional kitchens to refer to organizing and arranging the ingredients (e.g., cuts of meat, relishes, sauces, par-cooked items, spices, freshly chopped vegetables, and other components) that a cook will require for the menu items that are expected to be prepared during a shift. The practice is also effective in home kitchens.
    It makes the shift at the restaurant less frantic and quicker.
