A Bag O Mixed

- • 1 cup celery, chopped to suit. shopping list
- • 1 cup of the best spuds you can get, scrubbed, not peeled and cubed small. shopping list
- • 1 ½ cup fresh green beans, cut into 1 inch bits. shopping list
- • ½ cup fresh, roasted and peeled bell peppers, seeded and sliced into chunks; red or yellow to add color. shopping list
- • ½ cup carrots, scrapped and cubed. shopping list
- • 2 or 3 good sized mushrooms, sliced. Optional. shopping list
- • ½ cup of white beans, cooked, drained and rinsed. Optional. Can use canned. shopping list
- • ½ cup artichoke hearts, diced, Optional. shopping list
- • 1 cup zucchini squash (corrugates), cubed. Optional. shopping list
- • 1 cup broccoli florets, Optional. shopping list
- • 2 or 3 spears of asparagus, cut into 1 inch bits, Optional. shopping list
- • Salt and FG pepper to taste. shopping list
- • A pinch of Italian seasoning, Optional. shopping list
How to make it
- 1. Prep your veggies See Photo. Scrub, slice, dice, etc.
- 2. Get out your steamer and get it started. When it’s steaming;
- 3. Put in the spuds and steam for about 15 minutes. These are the only things the really need to be cooked. Everything else can be just steam blanched.
- 4. Add the carrots, green beans and celery, steam for 5 – 7 minutes.
- 5. Add asparagus, mushrooms zucchini, and bell pepper, broccoli, steam for about 5 minutes.
- 6. Remove from heat and allow to cool and drain a bit.
- 7. Dump the veggies into a good sized bowl.
- 8. Sprinkle on salt, FG pepper and any spice you’re using. Mix gently.
- 9. Add white beans or artichoke hearts, if using.
- 10. Add any other already cooked items you might like. Mix gently.
- 11. Let cool and refrigerate or freeze.
- These make a great side dish but I seldom eat them on their own. They go well with cooked pasta or rice and like some additions.
- When I use these I sometimes add some chopped beets, sliced ripe or kalamata olives, some rinsed homemade sauerkraut, fresh ripe chopped tomatoes, a bit of diced salami or other cooked sausage; cooked shrimp, etc. Add a little melted butter or a dash of vinaigrette dressing and Bob’s your uncle. Don’t worry, it’s Aussie speak.
- I usually put half a batch in the freezer and half in the fridge. This will last four or five days in the fridge and months in the freezer.
