How to make it

  • Preheat oven to 425
  • Line a baking pan and set wire rack on top.
  • Mix all dry ingredients
  • Dip each tilapia filet in beaten egg
  • Cover each piece in the coconut mixture lightly pressing so the coating adheres.
  • Spray each filet with coconut or olive oil spray.
  • Bake in preheated oven for 15 - 20 minutes or until coconut is lightly golden brown.

    This is a dish for the tropics. Tilapia, coconut, limes, coconut flour and raw sugar are all less than ten yards away. Great post, thanks.
