How to make it

  • 1. Go out to the Cookshack and turn the oven on to 450 degrees F. (232 C.).
  • 2. Place an 8 by 12-inch (20 by 30 cm) cast iron baking dish on the stove, over a med. Flame for 2 or 3 minutes.
  • 3. Meanwhile, in a mixing bowl, beat the eggs until foamy and light. Whisk in the milk until combined.
  • 4. Add the flour, herbs, a big pinch of salt, and some pepper, beat just until the batter is smooth.
  • 5. Pour the beef drippings into the bottom of the hot pan, swirl around a bit.
  • 6. Immediately pour in the batter and bake for 10 minutes.
  • 7. Reduce the oven temperature to 350 F (175 C.) and continue baking for 15 to 20 minutes until the pudding is puffy and brown.
  • 8. Serve immediately, it deflates rapidly.
  • This needs a bit of gravy of some sort. I did a simple herb and stock gravy that went well.
