Herbed Yorkshire Pudding

- • 3 eggs shopping list
- • 1 1/4 cups milk shopping list
- • 1 1/4 cups all-purpose flour shopping list
- • 3 Tbs. chopped fresh mixed herbs such as chives, thyme, and parsley shopping list
- • Kosher salt and freshly ground black pepper shopping list
- • 1/4 cup reserved beef drippings or melted butter shopping list
How to make it
- 1. Go out to the Cookshack and turn the oven on to 450 degrees F. (232 C.).
- 2. Place an 8 by 12-inch (20 by 30 cm) cast iron baking dish on the stove, over a med. Flame for 2 or 3 minutes.
- 3. Meanwhile, in a mixing bowl, beat the eggs until foamy and light. Whisk in the milk until combined.
- 4. Add the flour, herbs, a big pinch of salt, and some pepper, beat just until the batter is smooth.
- 5. Pour the beef drippings into the bottom of the hot pan, swirl around a bit.
- 6. Immediately pour in the batter and bake for 10 minutes.
- 7. Reduce the oven temperature to 350 F (175 C.) and continue baking for 15 to 20 minutes until the pudding is puffy and brown.
- 8. Serve immediately, it deflates rapidly.
- This needs a bit of gravy of some sort. I did a simple herb and stock gravy that went well.
