How to make it

  • Prep your stuff: Slice the prawns, chop the chilies, grate the zest, etc. See Photo
  • 1. Heat the oil in a large frying pan, over a gentle heat.
  • 2. Add the garlic, chilies and lemon zest and cook gently for 1 minute - be careful not to let the garlic brown and burn.
  • 3. Add the lemon juice, sherry and increase the heat until it is sizzling.
  • 4. Add the prawns and mushrooms, sauté until the prawns have all turned pink.
  • 5. Increase the heat and reduce the juices by half.
  • 6. Transfer to a dish and dress with parsley.
  • Serve with crusty bread. My wife likes this over rice and my daughter over pasta. I go for pasta but still have some bread.
