Cream Of Fresh Green Bean Soup

- • 1 1⁄2 cups chicken broth. shopping list
- • 1⁄2 cup onion, chopped. shopping list
- • 1 1⁄2 cups fresh green beans, cut in pieces. shopping list
- • 1⁄2 teaspoon dried savory (thyme), crushed. shopping list
- • A pinch of Italian seasoning, Optional. shopping list
- • 2 Tbs. butter. shopping list
- • 2 Tbs. flour. shopping list
- • 1 cup milk. shopping list
- • salt and FG pepper. shopping list
How to make it
- 1. In a saucepan, combine the chicken broth, chopped onion, green beans and savory.
- 2. Bring mixture to boiling. Reduce heat; cover and simmer 20 to 30 minutes or until vegetable is tender.
- 3. Place the vegetable mixture in a blender or food processor. Cover and blend 30 to 60 seconds or till smooth. Take care when blending hot liquids.
- 4. In the same saucepan, melt the butter or margarine.
- 5. Whisk in flour, salt and pepper.
- 6. Add the milk all at once, whisking till smooth.
- 7. Cook and stir till mixture is thickened and bubbly.
- 8. Stir in the blended vegetable mixture.
- 9. Cook and stir till soup is heated through.
- 10. Season with salt and pepper to taste and adjust thickness to suit.
