How to make it

  • 1. Slice the tomatoes across the stem axis, about ¼ in. (1/2 cm) thick.
  • 2. Set up the three bowls, flour and spices mixture, beaten egg and bread crumbs.
  • 3. Spray your skillet with cooking spray and add 1 tsp. butter.
  • 4. Heat until butter is bubbling but not burning.
  • 5. One slice at a time, dredge tomato in flour spice mixture then in egg and then in breadcrumbs. Gently lay in hot skillet.
  • 6. Repeat until skillet is full but not over crowded.
  • 7. Fry 1-2 minutes and turn over to fry the other side until light golden brown.
  • 8. Remove to paper towel lined plate to drain.
  • 9. Add a spoon of butter to skillet, dredge and fry another batch.
  • 10. Repeat until all the slices are cooked.
  • 11. Transfer to platter and serve.
