How to make it

  • Boil potatoes until just tender, drain and set aside.
  • Mix flour and spices together in large zip lock bag or in bowl. Add pork and shake or stir to coat.
  • Heat olive oil and 2 tablespoons butter in large skillet.
  • Add pork and cook until golden brown over med high heat, stirring occasionally. Pork should be cooked at this point or almost cooked through
  • Remove from heat and place in large casserole dish.
  • Melt remaining stick butter and add to the potatoes.
  • Add the cream and evaporated milk.
  • Mash or whip potatoes, adding more cream or milk if needed. Season well with salt, pepper, and a dash of garlic.
  • Make gravy according to package directions.
  • Pour gravy over meat then top with potatoes.
  • Sprinkle with cheese and bake in 350 preheated oven for about 20 minutes or until cheese is melted.
  • A few things you can add if desired: sautéed vegetables such as onions, bell pepper, celery, mushrooms , cubed squash and zucchini , or seasoned green peas, corn or a combination.
  • Remove from over and garnish if desired with parsley or sliced green onions. Allow to sit five minutes before serving if you can wait!
