Sweet And Sour Chicken

- For the sweet Sour Sauce: shopping list
- • 1 cup pineapple juice, can sub mandarin orange juice. shopping list
- • 1⁄3 cup water. shopping list
- • 3 Tbs. rice vinegar. shopping list
- • 1 Tbs. light soy sauce. shopping list
- • 1⁄2 cup raw sugar, can sub packed brown sugar. shopping list
- • 3 Tbs. cornstarch. shopping list
- For the chicken: shopping list
- • 2 tablespoons vegetable oil. shopping list
- • 2½-3 cups chicken deboned and sliced into strips. shopping list
- • Salt and FG pepper to taste. shopping list
- • ½ cup cornstarch. shopping list
- • ½ cup red bell pepper, seeded and sliced into strips. shopping list
- • ½ cup green bell pepper, seeded and sliced into strips. shopping list
- • 1 cup snow peas. Optional but nice. shopping list
- • 1 cup canned pineapple chunks, drained. Save the juice for the sweet sour sauce. shopping list
- • 1 cup homemade sweet sour sauce. shopping list
How to make it
- For the Sweet Sour Sauce:
- 1. Combine all ingredients in a sauce pan.
- 2. Cook over medium heat until thick, stirring constantly.
- Any extra sauce will keep well in the fridge.
- For the Chicken:
- 1. In a large skillet, heat oil over medium high heat.
- 2. Season chicken strips and lightly coat with cornstarch.
- 3. Gently add to pan and brown, turning once. Remove to plate or bowl.
- 4. Add red and green peppers and cook for 1-2 minutes, until soft.
- 5. Stir in pineapple chunks and chicken strips and cook 1-2 minutes.
- 6. Add the sweet sour sauce, bring to a simmer and simmer, stirring gently, for about 1 minute.
- 7. Serve over rice.
