How to make it

  • For the Sweet Sour Sauce:
  • 1. Combine all ingredients in a sauce pan.
  • 2. Cook over medium heat until thick, stirring constantly.
  • Any extra sauce will keep well in the fridge.
  • For the Chicken:
  • 1. In a large skillet, heat oil over medium high heat.
  • 2. Season chicken strips and lightly coat with cornstarch.
  • 3. Gently add to pan and brown, turning once. Remove to plate or bowl.
  • 4. Add red and green peppers and cook for 1-2 minutes, until soft.
  • 5. Stir in pineapple chunks and chicken strips and cook 1-2 minutes.
  • 6. Add the sweet sour sauce, bring to a simmer and simmer, stirring gently, for about 1 minute.
  • 7. Serve over rice.
