How to make it

  • 1. Prep the stuff. Slice, dice, seed and heat.
  • 2. If you’re using mince, cook that, with the spices, separately to get rid of the water. Drain.
  • 3. Heat 1 Tbs. of the olive oil in a large skillet.
  • 4. Add the onion, bell pepper, cumin and salt and FG pepper.
  • 5. Cook over medium heat until onion starts to turn.
  • 6. Remove to a heat proof bowl and add carnitas (or cooked mince), tomato and cilantro. Mix well.
  • 7. Lay a warm, soft tortilla out on the cutting board and put 4-5 Tbs. (more if you like) of the filling in a line in the middle. If you want beans this is where you add them. Sprinkle a little cheese here if you like.
  • 8. Fold the tortilla, top and bottom and side to side See Photo. Set aside.
  • 9. Repeat until all the stuffing is used up.
  • 10. Heat 2 Tbs. of the olive oil in your skillet over med. High heat.
  • 11. When the oil is hot add the burritos, folded side down, two or three at a time and cook 1-2 minutes per side; until the tortilla is just a light brown. Remove to paper towels to drain.
  • 12. Repeat until all the burritos are fried.
  • 13. Top with sour cream, cheese, guacamole or salsa and serve.
  • All you need is plenty of cold cervesa.
