Homemade Vanilla Extract From Beans

- • 1 cup good quality Rum, brandy, bourbon or Vodka. I prefer rum because I can get excellent 120 proof rum from Fiji but Vodka will give you the purest vanilla taste. shopping list
- • About 5 Vanilla beans, in the pod. shopping list
- • One 2 cup glass jar/bottle (taller is better) and a tight fitting cap is a must. shopping list

How to make it
- 1. Get whole vanilla beans, in their pod. See Photo
- 2. Slice vanilla beans in half lengthwise to reveal inside of beans. Cut if needed to make them fit into your jar/bottle.
- 3. Place in glass jar/bottle.
- 4. Pour alcohol over the beans, to cover completely.
- 5. Cap tightly and shake gently and put in a dark, cool place in the pantry. See Photo
- 6. Put the beans you haven’t used in a resealable plastic bag or tightly sealed container for future use.
- Store in a cool, dark place for at least a month, shaking occasionally. I prefer to leave 2-3 months for best flavor. If you use decent alcohol at 90 proof, or better, this will last 50 years or so in the pantry. When I start using one batch I make up a fresh batch, date it, and put it in the pantry to age.
