Mexican Ceviche

- • 1-2 lbs. (500-1000 g.) fresh fish fillets, cubed. Bonito-Yellowfin-snapper and sea bass are popular but whatever. This is about 3-6 cups. Yes, it varies this much. Do what suits you. shopping list
- • 1-2 Tbs. fresh lime juice. Optional but usual. shopping list
- • 1 qt. (1 ltr.) fresh coconut milk (coconut cream). shopping list
- • 2 cups diced ripe tomatoes. shopping list
- • 1 cup diced onion. Optional. Not found often. shopping list
- • 2-3 Tbs. Salsa Verde. Optional. shopping list
- • 1 cup peeled and seeded cucumber, cubed. Optional but found often. shopping list
- • 1-1½ cup mild chili pepper, diced. shopping list
- • About 1 cup diced artichoke bottoms. Optional and I only had this twice. Delicious. shopping list
- • 4-8 Tbs. medium hot chili pepper, to taste. shopping list
- • 1-2 tsp. cilantro, to taste. shopping list
- • 1 tsp. garlic. Minced. Optional. shopping list
- • 1 tsp. dried oregano. shopping list
- • 2 cups of ice. One block is best but cubes will do. Optional. shopping list
- • A stack of fresh tortillas, usually both corn and flour, and a couple pots of salsa picante on the side. shopping list
How to make it
- 1. Prep all the stuff. Slice, fillet, mash, dice, grate, etc.
- 2. Put the diced fish in a large bowl, add the lime juice and stir gently. Wait 5 minutes and stir again. Wait 5 minutes.
- 3. Add all of the other ingredients, except the tortillas and ice, to the fish and stir gently but well. Let stand 10 minutes and stir again. Let stand 5 minutes and add the ice cubes (if using). Stir gently.
- 4. Cover and let sit a while or put it in the fridge for a spell. Stir gently now and then. In Mexico back then, seldom any ice or a fridge. It got covered and stirred a bit for 30 minutes and served. If the fish is fresh when you start, no problamo.
- I’ve had Mexican Ceviche made with bits of cooked crab, lobster or shrimp added to the above recipe. How much seemed to be a matter of how much they had or felt like adding.
- I’ve also had Ceviche served with mashed, spiced avocado on the side. A small dip of avocado and a large dip of Ceviche, a sip of cervesa and munch away.
