Avocado Fries With Sweet Chipotle Dip

- 3 Firm Avocados shopping list
- 2 Eggs shopping list
- 1/2 Cup Oat Flour (Or – almond Meal) shopping list
- Salt and Pepper shopping list

- Skinny Chipotle Dip shopping list
- 1/4 Cup Non-Fat Greek Yogurt (I like Fage 0%) shopping list
- 2 Tbsp Low-Fat Cottage cheese shopping list
- 1 Tsp Chipotle chili powder shopping list
- 2 Tsp raw honey shopping list
- Blend all ingredients in a food processor or blender until smooth. shopping list
- Serve in a dipping bowl. Enjoy! shopping list
How to make it
- Pre-heat oven to 425 F.
- Cut avocados into “fry-sized” wedges.
- In one bowl add 1/2 cup of oat flour or almond meal.
- In a separate bowl beat two eggs, until blended.
- Add salt and pepper to the eggs.
- Dip Avocado slices in eggs (one slice at a time) then directly place them in the flour. Make sure they’re completely covered in flour.
- Place avocado fries on a parchment covered baking sheet evenly spaced.
- Bake for 25 minutes (or until brown) flipping them once.
- Serve hot.
