Cheesy Crock Pot Casserole

- • 1/4 cup diced onion. shopping list
- • 1/2 tsp pepper. shopping list
- • 1 tsp salt. shopping list
- • 1/2 tsp Mrs. Dash. shopping list
- • 1 lb. (450 g.) small red potatoes, sliced thin (about 4-5 small). shopping list
- • 1½ cups heavy cream. shopping list
- • ¼ cup dry red wine. shopping list
- • 2 cups diced mushrooms. shopping list
- • 1 Tbs. Worcestershire sauce. shopping list
- • 1 Bay leaf. shopping list
- • 1 Tbs. butter. shopping list
- • ½ tsp. Oregano. shopping list
- • 1 lb. (450 g.) ground beef or pork browned in the butter and drained. shopping list
- • 2 cups diced fresh tomatoes. shopping list
- • 1 cup fresh corn. Can sub frozen. shopping list
- • 1 can dark red kidney beans, drained. shopping list
- • 1 cup of shredded cheddar cheese. shopping list
How to make it
- 1. Place all of the ingredients except the cheese in a 4- 6 quart crock pot and stir well.
- 2. Cover and cook on high for 4 hours or on low for 7-8 hours.
- 3. Turn off the crock-pot and sprinkle shredded cheese over the top of the lot, recover and let sit at least an additional 30 minutes.
- 4. Serve.
