Chchchia Pancakes

- 1 cup 2% milk shopping list
- 1 egg shopping list
- 1 Tb flax oil shopping list
- 1 Tb chia seeds shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp no-salt (potassium chloride) shopping list
- 2 tsp baking powder shopping list
- 1 cup tigernut flour shopping list
- 1/4 cup white flour shopping list
- 2 Tbsp whey powder shopping list
- 1 Tbsp canola oil for the grill shopping list
How to make it
- Whisk together milk, egg, flax oil, syrup, and chia seeds in a medium bowl and let rest for three minutes.
- Preheat grill, medium, and brush the surface with a small amount of oil.
- Measure tigernut flour, salt, no-salt, baking powder and white flour on top of the chia mixture and blend together quickly.
- The batter should be smooth enough to pour. Add water a tablespoon at a time if too thick.
- Measure 1/4 cup of the batter on to the grill pan, cook, flip, cook.
- Repeat until the batter is used up.
- Stack the pancakes attractively and post a picture on Instagram to impress your friends.
- Serve with Greek Yogurt and fruit, with maybe a drizzle of your favourite syrup.
- Run a 10K with the superior energy supplied by your pancakes.
