Watermelon Cupcakes

- 2/3 cup butter, softened shopping list
- 3/4 cup superfine sugar shopping list
- 1 1/2 cups self-rising flour shopping list
- 3 eggs shopping list
- 1 tsp vanilla extract shopping list
- Jar of White frosting shopping list
- Red and green food coloring shopping list
- 1 cup of Mini chocolate chips shopping list
How to make it
- Preheat oven to 350 degrees F .
- Grease a 12 cup muffin pan or line with paper baking cups.
- In a large bowl, mix butter and sugar with an electric mixer for about 5 minutes.
- Stir in the eggs, one at a time.
- Stir in the vanilla and flour just until mixed.
- Add a drop of food coloring. You want them pink so don't overdo it. if you need more gradually add a drop or 2.
- Stir in the chocolate chips.
- Scoop the batter into the prepared cups.
- Bake in the preheated oven until the tops spring back when lightly pressed, 18 to 20 minutes.
- Once cooled mix together the frosting and the green coloring. You want it bright green.
- Frost the cupakes and press in more chocolate chips for seeds.
