Watermelon Cupcakes Recipe

How to make it

  • Preheat oven to 350 degrees F .
  • Grease a 12 cup muffin pan or line with paper baking cups.
  • In a large bowl, mix butter and sugar with an electric mixer for about 5 minutes.
  • Stir in the eggs, one at a time.
  • Stir in the vanilla and flour just until mixed.
  • Add a drop of food coloring. You want them pink so don't overdo it. if you need more gradually add a drop or 2.
  • Stir in the chocolate chips.
  • Scoop the batter into the prepared cups.
  • Bake in the preheated oven until the tops spring back when lightly pressed, 18 to 20 minutes.
  • Once cooled mix together the frosting and the green coloring. You want it bright green.
  • Frost the cupakes and press in more chocolate chips for seeds.
