How to make it

  • Put the premade soup and the cubed potatoes into a medium pot and bring to a simmer. Cook until the potatoes are fork-tender, about 15 minutes. Add mushrooms and cook another 10 minutes. Add meat and cook 5 minutes more, to warm the meat through. Serve with a bit of coconut cream or a dallop of yogurt, if you like.
  • Variation: add a pinch a Turmeric when the potatoes go in and add 1/2 cup frozen peas when you add the meat.
