How to make it

  • Using your hands, break up the carcass into 4 or more pieces and put it into a large pot. Cover with COLD water and bring to a near boil. Simmer on medium-low for 3 hours.
  • Strain stock and return to the pot. Continue to simmer another hour or so until the quantity has been reduced by about half. refrigerate until need or freeze.
  • As for the carcass, pick it clean of meat before through it out.
