Caramelised Onions

- 30g/1oz butter shopping list
- 1 Onion - finely sliced shopping list
- Pinch Sugar - to taste shopping list
- 1 sprig Thyme shopping list
- 3tbsp balsamic vinegar - to taste shopping list
- Salt and freshly ground black pepper shopping list
- Optional: 2 to 3 rashers Smoked and/or Plain Streaky bacon - to taste shopping list
How to make it
- Heat half the butter in a frying pan, add the bacon rashers, if using, and cook on a lowish heat for some 4 to 5 minutes or so or until starting to turn golden and crisp up;
- Remove, dice and set aside;
- Add the rest of the butter, the onions, sugar and thyme and cook over a gentle heat for some 8 to10 minutes until the onions are tender;
- Increase the heat to high and, stirring occasionally, cook them until they start to turn golden-brown,
- Pour in the vinegar and cook until it has evaporated to thick syrup;
- Season to taste with salt and pepper and remove the thyme;
- Place in a serving dish and sprinkle over the bacon bits.
