Sloppy Joe Tater Tot Casserole

- 1 pound ground beef (your favorite ground meat actually) shopping list
- 1 red bell pepper, diced shopping list
- 1 sweet onion, diced shopping list
- 1 can corn, drained (using fresh green beans better 4 me) shopping list
- 1 can sloppy joe sauce (using your favorite homemade sauce) shopping list
- 2 ounces cream cheese (plain Greek yogurt?)(sour cream?) shopping list
- 8 ounces cheddar cheese, grated (I used 10 slices of Velveeta cheese, then put on the 8 hash brown patties, which I then covered with slices of block cheese, that I cut as I put them on, any flavor to your preference should work) shopping list
- 16 ounces tater tots shopping list
- chives, for sprinkling on top as desired shopping list

- 2 tablespoons dill relish, off sets the sweetness of the sloppy joe sauce shopping list

- 6 spears of dill pickles or one whole dill pickle chopped fine shopping list

- 1 can diced tomatoes, juice and all shopping list
- 1 can black bean, juice and all, great protein add shopping list
- I used 1 can of mixed vegetable instead of corn shopping list
- or use shopping list
- 1 can sweet peas, even more protein and a unique flavor add shopping list
- Using the hash brown patties instead of tater tots shopping list
- -OR- top with mashed potatoes, or better yet shopping list
- Garlic mashed potatoes, or my daughters great cheesie mashed potatoes shopping list
- yellow or green pepper, red pepper would be a waste of bright color as it is mostly red, shopping list

How to make it
- Preheat oven to 450 degrees.
- In a large skillet, brown the ground beef with the peppers and onions until the meat is cooked through. Drain the fat and return to the heat. Stir in the corn, sloppy joe sauce, and cream cheese. Cook over low heat until the cream cheese is melted.
- Pour the sloppy joe mixture into a 9x13 baking dish. Top with half of the grated cheese.
- Arrange the tater tots in a single layer over the top of the cheese. Sprinkle the top with the remaining cheese.
- Bake for 20 minutes. Remove from the oven and sprinkle with chopped chives if desired. Serve immediately.
