Bow Tie Pasta Salad With Ham And Peas

- 1 pound Bow Tie Pasta (or pasta of your choice) shopping list
- 1/2 cup olive or canola oil shopping list
- 1/3 cup of vinegar (I use half lemon juice and vinegar) Use any vinegar you like, red wine, apple cider etc... shopping list
- 2 tsp's dried basil shopping list
- 1 tsp dried oregano shopping list
- 2 tsp's parsley flakes shopping list
- 1 clove of garlic, minced shopping list
- 1/4 tsp pepper shopping list
- 1/2 cup chopped green onions shopping list
- 1/2 cup finely diced red pepper shopping list
- 1/3 cup grated parmesan or romano cheese shopping list
- 2 cups of diced cooked ham shopping list
- 1/2 cup Fresh Shelled Peas or frozen and thawed peas shopping list
- 1/2 cup diced cheddar cheese (optional) shopping list
- * salt n pepper to taste, keeping in mind the ham and cheeses will be salty* shopping list
- ~Makes about 5-6 cups of pasta salad. shopping list
How to make it
- Cook the pasta according to the box instructions, making sure it's tender but firm. Drain and rinse with cold water; set aside to finish draining.
- While the pasta is cooking, mix the oil, vinegar (and/or lemon juice) with dried herbs, garlic and black pepper. Chop the green onions and add the whites to the dressing.
- Once the pasta has cooled and drained, mix in the dressing and add the remaining green onions, red pepper, ham, peas and cheddar cheese. Refrigerate for at least 4 hours, stirring thoroughly before serving. Check for seasonings and add more herbs, dressing etc..to suit your tastes.
- All measurements are guidelines, you can add as little or as much ham, peas, veggies, cheese etc. as you like! (You can always make more dressing if the pasta becomes dry, it really depends on humidity of the vegetables and type of pasta you use)
