How to make it

  • 1. Preheat your oven to 350 degrees. Your pan needs to be at least 10" x 9.5" x 2.5" deep.
  • 2. Mix the egg in with the cottage cheese and set aside.
  • 3. Stir fry the ground beef and onion in a large, deep fry pan and then salt same.
  • 4. Stir the spaghetti sauce, 2/3 of the chopped tomatoes (using a slotted spoon), 1/4 can of the juice from the tomatoes (guestimate), and 1/2 of the can of tomato sauce into the meat/onion mix.
  • 5. In your lasagna pan, start with a thin layer of meat sauce, then a layer of noodles. I break my noodles to fit the pan if I have to. It doesn't matter in the end if they are broken or not. I use all the noodles except one from a box.
  • 6. After your first layer of noodles do the entire bowl of cottage cheese, another layer of sauce, a layer of noodles, a layer of sauce, and just make sure you finish with a layer of noodles, because you want to cover that final layer of noodles with your slices of cheddar and then your bag of mozza.
  • 7. Bake the lasagna for the first 30 minutes covered with tin foil using toothpicks in the lasagna all over to tent the tin foil to prevent the cheese from sticking.
  • 8. Remove the tin foil and toothpicks so the cheese and the noodles get all brown and crusty on top.
  • 9. If at the end of the final 30 minutes the top still isn't really nice and brown and crispy and you want it that way turn the oven to broil, just leave the lasagna where it is on the rack and watch it with the light on, until the top starts to broil and get the way you want it. Those crusty noodles and crispy cheese on top are really worth it.
  • 10. Once you remove the lasagna from the oven you have to let it sit for 10 minutes to set up before cutting it otherwise you will have a gloopy mess.
  • 11. Make this months ahead and freeze it. Bring it out and either bake it frozen or thaw and bake. It will take quite awhile to bake the whole thing from frozen. But I freeze baked pieces and bring out and microwave from frozen and they are delicious for a quick meal just for the two of us!
