Ingredients

  • 200 g. deli ham, cut into strips (I think little cubes would be good. It would probably also be good with cooked bacon. Try it once and then use your imagination. Maybe even just vegetable.) shopping list
  • 1 red pepper, cut in strips (I made it with sun-dried tomatoes, yum) shopping list
  • 1 pkg. frozen spinach (1 c. once thawed and squeezed) shopping list
  • 6 eggs shopping list
  • 1 - 300 g. pkg of puff pastry shopping list
  • 2 c. cheese (use Swiss and/or gruyere or combination of some kind. I find Cheddar way too bland and oozy for this pie unless you go easy on it.) shopping list

How to make it

  • Line bottom of 9" spring form pan or deep dish pie plate with 2/3 of the pastry (leave overlap on sides for binding).
  • Layer ham, red pepper, spinach and cheese on on the bottom crust.
  • Beat eggs, reserving 1 T. for brushing on the top of the pastry and pour over ham mixture.
  • Roll the remaining pastry to fit the top of the pie.
  • Place on top of pie and bind bottom and top edges together well.
  • Cut slits for steam and brush with the remaining T. of egg.
  • Bake at 350 degrees for 45 minutes. Freeze for up to one month.
