Dairy-Free Hot Chocolate

This recipe is inspired by the rich hot chocolate made for me "off the cuff" at the COCOA 70 CAFE in Ottawa's Byward Market. Dairy-free hot chocolate is not on their menu; however, they always manage to make a custom drink for me (different each time depending on who is in the kitchen)!
Ingredients
- 1/2 C water shopping list
- 2 T honey shopping list
- 1/4 C CAMINO (TM) brand Dutch-processed cocoa, sifted shopping list
- 1 C AROY-D (TM) brand coconut milk (boxed version, not the canned version) shopping list
- Marshmallows for garnish shopping list
How to make it
- NOTE: AROY-D is more delicious than the vast majority of coconut milks on the market; however, only the version in a box is highly delicious. The version that comes in a can tastes quite different.
- Boil water in a small pot and add honey to dissolve. Add cocoa powder and use a stick blender to make a paste. Add coconut milk and heat through. Serve in cups and garnish with marshmallows.
