How to make it

  • 1) Preheat a pot over medium high heat; you will know that the pot is ready when you place your hand about an inch above the pan’s surface and you feel heat radiating from the pan. Now add the oil; swirl it around the pan.
  • Add the chopped bell pepper, and greens onions and saute until they are barely opaque. Add the cumin and smoked paprika and stir the spices around the pan; this will bring out their warm flavors.
  • Add the quinoa, stirring it thoroughly until well combined with the vegetables; now stir in the minced garlic. Pour in the vegetable broth and stir until well combined. Cover the pot; reduce the heat to medium and simmer for about 15 minutes, stirring occasionally, or until the quinoa is cooked though and fluffy. Now add the peas; stir them throughout the quinoa. The hot quinoa will cook them in about 30 seconds. Add the pine nuts and the parsley; stir until well combined.
  • 2) Serve and enjoy!
