- 9-10 cups all-purpose or bread flour shopping list
- OR, for whole wheat version, 5-6 cups all-purpose or bread flour and 4 cups shopping list
- whole wheat flour shopping list
- 2 pkg yeast shopping list
- 1/4 cup plus 2 T sugar shopping list
- 1 1/2 tsp salt shopping list
- 3 cups warm water shopping list
- 1 1/2 cups milk shopping list
- Filling: shopping list
- 1 small head cabbage (approx 2 lb) shopping list
- 1 medium onion shopping list
- 1 pound ground beef shopping list
- salt and pepper to taste shopping list
- 1) In a large sauce pan, brown ground beef and onion shopping list
- 2) Cut cabbage into small pieces. shopping list
- 3) When meat andonion is brown, add cabbage, cover with lid and steam until cabbage is tender; cool. shopping list
- If using an Instant Pot, place on "saute" setting; add one cup water to filling mix. shopping list
- Other fillings include taco, Italitan, diced ham and cheese, broccoli and cheese,etc. shopping list
- A package cole slaw mix can be substituted for the cabbage. Grated carrots, diced bell peppers, cheese, etc. may be added to develop the flavor wanted. shopping list
How to make it
- Instructions for dough:
- 1) In a large mixing bowl, or mixer bowl, add 4 cups flour, yeast, sugar, and salt. Stir well. If making whole wheat dough, add 3 cups AP/bread flour, 2 cups whole wheat flour.
- 2) Add water, milk, yeast, sugar, and salt. Mix well, then beat untilmixturesheets from spoon, 3-5 minutes.
- Note: The instructor had us heat the water in the microwave for 90 seconds, the milk for 30 seconds. This was in a glass measuring cup. She used the finger method of testing the fluid--make sure it is comfortable for a finger inserted into the fluid.
- 3) White Bread Dough: Add the rest of the flour 1 cup at a time until the dough is thick enough to knead.
- Whole Wheat Bread Dough: Add 2 cups whole wheat flour and the rest of the AP or bread flouruntil the dough is thick enough to knead.
- 4) Knead for 3-5 minutes.
- 5) Allow the dough to rise until double in size. I sprayed it with PAM on both sides, and covered it with a clean kitchen towel.
- Instructions to make bierocks:
- 1) Divide the dough into egg-sized balls. The larger the balls, the larger the bierock. Or, roll out 1/2 the dough and cut into 4" squares (we used 6" squares in the class).
- 2) Roll the pieces into a rectangle or a circle. Add 1/2 cup of filling, fold over and seal. (She said it's easiest if the filling is made ahead and chilled.)
- 3) Placed sealed side down on baking sheet. Bake in a 375F oven for 15-20 minutes.
- 4) Remove from oven to cooling rack, cover top with melted butter.
- The bierocksmay be frozen baked or unbaked. If frozen unbaked, thaw, then bake as instructed above.
