How to make it

  • Heat the oil in a medium saucepan over medium heat. When the oil is hot, add the flour and whisk for a few minutes until it bubbles and colors slightly. Do not let it burn. Whisk in the chile powder. Slowly pour in the chicken broth stirring until fully incorporated with the chile mixture. Add the cumin, garlic powder, salt, cinnamon and sugar. Stir to combine and bring to a boil. Once boiling, stir and cook for 5 minutes. Use it immediately or let set off the heat for a few minutes. A "skin" will form on the top of the sauce if allowed to set too long - stir it back in until smooth or remove it.

    Hi, LindaLMT - Most authentic Mexican Enchilada sauce recipes I have seen do not have tomato in the ingredients. Add it if you wish!
