Wok Style Wine & Lemon Leeks

- 2tbsp Extra Virgin Olive Oil shopping list
- 3 large Leeks - white and light green parts - chopped shopping list
- Quantity Dry White Wine - to taste shopping list
- ½ Lemon - Juice + zest - to taste shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Heat the oil in a wok over medium heat, add the leeks and cook for some 15 minutes or so or until beginning to soften and turn golden brown;
- Add the wine, lemon juice and zest and season with salt and pepper - all to taste;
- Continue to cook, stirring often,on a medium low heat, for a further 10 minutes or so or until tender;
- Taste for seasoning and flavour and serve
