How to make it

  • Melt butter on a medium heat in a non-stick pan, and allow it to foam a bit;
  • Add bacon and cook, stirring occasionally, for some 2 to 3 minutes or so, until starts to colour but not crisp;
  • Add onion, mix in well and, stirring occasionally, cook for a minute or so
  • Add the cabbage, again mix in well and stirring occasionally, cook for some 5 minutes or so until it all starts to colour;
  • Add mash, season with salt & pepper, and combine everything together well, pushing it down so the mixture covers the base of the pan;
  • Continue cooking until the edges start to brown then ruffle the top of the mixture using a fork - the more ruffled, the more crispy bits;
  • Continue cooking to allow the mixture to catch and become well coloured on the base of the pan;
  • Turn it over and allow the same thing to happen on the other side making sure well coloured but not burnt
  • Cut into wedges and serve.
