Nana's Ice Box Pie

- CRUST shopping list
- 1 1/2 c. (1 pkg) chocolate wafers; crushed & pulsed in a food processor or smashed in a ziplock to a medium crumb, save 2 T of larger crumbs to sprinkle on the top of the pie. shopping list
- 1/4 c brown sugar shopping list
- 6T melted butter shopping list
- 1/4 tsp. Salt shopping list
- FILLING shopping list
- 1 envelope of Unflavored gelatin shopping list
- 1/4 c. Cold water shopping list
- 1 14oz can of Eagle brand sweetened condensed milk (Do not substitute evaporated milk) shopping list
- 8 oz pkg. Cream cheese, softened shopping list
- 3/4 c. Granulated Sugar shopping list
- 2 tsp. Vanilla shopping list
- 1 c. Whipping (heavy) cream shopping list
How to make it
- PIE CRUST
- Mix ingrediants, place into 9-inch pie plate and pat some of the crumbs up the sides. Press the bottom of the pie plate with a small glass to form the wafer crust .
- Place in preheated oven at 350° for 10-12 minutes.
- Take out of oven and let cool thoroughly before filling.
- PIE FILLING
- Sprinkle gelatin over cold water and let sit, do not stir for 15 minutes.
- Combine Condensed Milk, cream cheese, sugar and vanilla thoroughly.
- Add the gelatin and water to the cream cheese mix.
- Put aside.
- In a separate chilled bowl, whip heavy cream to stiff peaks,.
- Fold into cream cheese mixture slowly to combine.
- Take care not to break down the bubbles in the whipped cream.
- Refrigerate the resulting cream until the crust is cool.
- Fill pie crust and cover, cool overnight.
- Before serving, Sprinkle the pie with the 2 T of wafer crumbs and serve immediately.
