How to make it

  • In a large sauté pan (with a lid) over medium to low heat, add literally everything. If the sausage isn't frozen, roughly chop it up, give it all a quick few turns with a spatula, put the lid on and leave it for 3-5 mins.
  • Come back and after the frozen taters have softened up, give it a more thorough chop and mix well. Set the lid on, put the heat on low and leave it for another 5-7 mins.
  • Repeat this chop/mix, lid, cook on low for 5-7 mins method at least twice. If you like your potatoes extra crispy do it a third time. Serve with eggs, corn tortillas, avocado, fruit, whatever you want. This is a dish I've made many times, it's versitile and cheap af.
