Cottage Cheese And Oatmeal Pudding

- 1 cup cottage cheese shopping list
- 1/8 t salt shopping list
- 3T sour cream shopping list
- 2 cups cooked oatmeal shopping list
- 2 c apples, cut into bite-sized cubes shopping list
- 1 t cinnamon ( raisins were used in original recipe. dried cranberries, or cherries or blueberries etc would be nice too) shopping list
- 2 eggs shopping list
- 2/3--1 cup milk shopping list
- 1-2 t zest shopping list
- 2 T brown sugar + cinnamon + tiny pieces of butter* shopping list
- 1 T butter* shopping list
How to make it
- In a 1 1/2 quart baking pan, use spray to eliminate sticking. Spread a layer of oatmeal all across bottom of dish reserving a few spoons of oatmeal to put on top layer.. Combine the cottage cheese w salt and sour cream. This is the second layer
- Toss the apples with the cinnamon. Slightly beat the eggs, and add the small amount of milk and zest. Toss the apples into the wet ingredients. Third layer. On the very top dollop the remaining oatmeal over the top and sprinkle the brown sugar and cinnamon. Top with tiny bits of butter.
- ;Bake at 350 for 45 minutes or until the oatmeal is golden and the center is set. Enjoy!
