Roasted Vegetable Crustless Quiche

- 3 eggs, slightly beaten shopping list
- 2 cups evaporated milk shopping list
- salt and pepper to taste shopping list
- anti-stick spray (9 inch uncooked pie shell.optional) shopping list
- 3/4 cup grated cheese shopping list
- Roasted veggies on hand: Savoy and red cabbage, cauliflower, yams , vidalia onion shopping list
- half cup steamed broccolli shopping list
- 2-3 T bottled pico de gallo by Goya shopping list
How to make it
- 9 inch pie plate Spray well.Preheat oven 350. Spread the grated cheese over the bottom of the baking dish. In a deep bowl scramble eggs add milk and combine; throw the chopped veggies, and stir --turn out into pie plate and even out the vegetables. Top the eggy veggies w the salsa around the center. Bake 30-35 minutes or until edge is set and center is still giggly. Let rest about 15 minutes. If desired serve on a bed of varied greens. Delicious and healthy! (especially for a damaged tongue)
