Paleo Banana Bread Brownies

- 1 12 oz package of Birch Benders just-add-water Paleo pancake mix shopping list
- 2 Overripe bananas shopping list
- 1½-2 cups of Chesterfield's carob chips shopping list
- 1-2 Tbsp almond butter shopping list
- 1 Tbsp coconut oil shopping list
- 2 Tbsps Date syrup, or whatever you want to use. I love this stuff, it's definitely worth a try. Can be subbed out for 2 Tbsps agave or honey, or even 1/3 Cup brown sugar if you can tolerate it. I've never tried this bread with those subs so measurements may need tweaking. shopping list
- 1 tsp vanilla extract shopping list
- 1 Tbsp cinnamon shopping list
- 1 tsp ground nutmeg and cloves shopping list
- 1 cup Lactaid milk, can be subbed out for any milk or even water shopping list
How to make it
- Preheat the oven to 350°F. Mix all the ingredients into a large bowl and make sure it's all blended. There's no particular order or special method, I just slopped everything together.
- The mixture should have the consistency of cookie dough. Don't add too much milk.
- It doesn't fry well so don't try to fry them like actual pancakes, either. Grease a large pan and spread the batter in as thinly as possible.
- Bake at 350° for 15-20 minutes, depending on altitude or oven quality. Check center for doneness at the 15 minute mark and gauge from there.
- These are awesome and safe for most folks with gluten/lactose sensitivity and chocolate allergies. I can make an AIP version of this using cassava flour and tapioca starch. May post later.
