How to make it

  • Whip all wet ingredients together from egg to stevia, including the sugar (I use chopsticks).
  • Measure the rest of the ingredients on top of the wet and quickly blend (I use selfsame chopsticks).
  • Add water if the batter comes together as a dough. You want a pourable batter, but still thick.
  • Measure out a half cup at a time on your hot and oiled griddle and flip when first side is browned (peeking is allowed).
  • Serve with whatever you desire. Hubby likes apricot jam.
