Coriander Pancakes

- 1 egg shopping list
- 1 tablespoon cooking oil shopping list
- 1 cup milk shopping list
- 2 tablespoons sugar shopping list
- 1 teaspoon vanilla shopping list
- 4 drops hazelnut stevia shopping list
- 1 1/4 cup flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- Pinch turmeric shopping list
- 1/2 teaspoon ground coriander shopping list
- 1/4 cup flax meal shopping list
- Water to get final batter consistency shopping list
- Oil as needed for pan shopping list
How to make it
- Whip all wet ingredients together from egg to stevia, including the sugar (I use chopsticks).
- Measure the rest of the ingredients on top of the wet and quickly blend (I use selfsame chopsticks).
- Add water if the batter comes together as a dough. You want a pourable batter, but still thick.
- Measure out a half cup at a time on your hot and oiled griddle and flip when first side is browned (peeking is allowed).
- Serve with whatever you desire. Hubby likes apricot jam.
