Curry Apple Chicken Salad

- 3/4 cup (175 ml) full fat Greek yogurt shopping list
- 1 1/2 tsp (7.5 ml) curry powder shopping list
- Salt and pepper, to taste shopping list
- 2 cups (500 ml) rotisserie chicken, shredded shopping list
- 1 large green apple, diced shopping list
- 1/4 cup (60 ml) golden raisins shopping list
- 1/2 cup (125 ml) halved red grapes shopping list
- 3 tbsp (45 ml) minced shallots shopping list
- 2 stalks celery, finely diced shopping list
- 1 tbsp (15 ml) fresh chives, minced shopping list
- 1 loaf (12 slices) Stonemill Bakehouse Sprouted 3 Grains bread shopping list
How to make it
- In a large bowl, mix together the Greek yogurt, curry powder, salt and pepper.
- Into the bowl, add the chicken, apple, raisins, grapes, shallots, celery, and chives. Toss until everything is well coated in the dressing.
- Divide mixture between 6 slices of bread and top each with the corresponding slice.
