How to make it

  • Mix all of the top ingredients well.
  • Let set for a couple of hours to get cool, and for the flavors to mix.
  • ~ ~ ~
  • Take the 2 corn rounds and place them on a plate.
  • Take the cheese and half it to make triangle shapes,
  • placing each triangle on one half of each round.
  • Microwave this of around 20 to 30 seconds, just enough
  • to melt the cheese a little and make the corn shell soft
  • so it will fold and not break very often.
  • ~ ~ ~
  • I would use a little salad plate, and place both on it.
  • Half of each corn tortilla on the plate and the other
  • halves in the center holding each other up in the air.
  • ~ ~ ~
  • Put the tuna salad, lettuce and toms - AND / OR - other stuff listed above on one side of each round.
  • OR, other things not listed that you might want!
  • If NOT dieting, you could even add pre-cooked bacon!!!!
  • I placed it on the cheese side, do not know why, just did.
  • Fold in half.
  • Grab a napkin!!!
  • And Enjoy!!!

  • NOTE:
  • Save the drained liquid fro the tuna to add to your evening noodles for more umami taste. Or just freeze it until you find a place to use it.
  • I keep all the liquids from cans of veggies and such, I pour them into a 1/2 gallon milk jug to freeze them.
  • Makes great stock for stews and such!
